$ ssh -X user at host gnome-terminal

should open a gnome-terminal on the remote host with that host's default
profile. Of course, a remote server may not have gnome installed.

Or you File->Open Tab->Choose Profile to open a different tab for each
system. Then only ssh into your remote systems from the currect tab.
You may also want to set your prompt differently for each system.

I'm sure more ideas are available from the Gnome folks.
