Turns out my wife is in a similar mood, so I dug a bit more.
Looking at those benchmarks, it seems the Intel Core 2 Duo e6600
is the best choice for CPU.  (Yes, it's $300.  Ouch.)
So... which motherboard?  Sticking with Intel for the moment,
it seems there's a choice between two chipsets: the 965 and the 975.
And oh, my, the JMicro parallel ATA chips on both motherboards
was not supported by Linux until, like, three months ago.

the 965 is very picky about RAM (it needs a particular voltage?).
All in all, the 975 looks like a safer bet, but it's also $200 more expensive.
